INGREDIENTS

  • 1 cup milk, room temperature
  • 2 eggs, room temperature
  • 1 tablespoon sugar
  • 2 tablespoons butter, melted and cooled
  • 1 teaspoon vanilla extract
  • 1 cup flour
  • 1/4 teaspoon salt
  • Melted butter for the pan

Garnishes:

  • Blackberries
  • Raspberries
  • Blueberries
  • Melted chocolate
  • Icing sugar

HOW TO MAKE IT

  1. In a mixing bowl, whisk together the eggs, milk, melted butter, and vanilla until fully combined.
  2. Add the flour, sugar, and salt, whisking until the batter is smooth and free of lumps. Let the batter rest for 10 minutes.
  3. Heat a STAUB crêpe pan over medium heat and lightly brush with melted butter.
  4. Pour a ladle of batter into the pan, quickly swirling or using a spreader to create a thin, even layer.
  5. Cook until the edges lift and the bottom is lightly golden, then flip and cook the other side briefly.
  6. Transfer to a plate and repeat with the remaining batter, adding more butter to the pan as needed.
  7. Serve warm with fresh berries, melted chocolate, and a dusting of icing sugar, if desired.
