INGREDIENTS
- 1 cup milk, room temperature
- 2 eggs, room temperature
- 1 tablespoon sugar
- 2 tablespoons butter, melted and cooled
- 1 teaspoon vanilla extract
- 1 cup flour
- 1/4 teaspoon salt
- Melted butter for the pan

- Melted chocolate
- Icing sugar
HOW TO MAKE IT
- In a mixing bowl, whisk together the eggs, milk, melted butter, and vanilla until fully combined.
- Add the flour, sugar, and salt, whisking until the batter is smooth and free of lumps. Let the batter rest for 10 minutes.
- Heat a STAUB crêpe pan over medium heat and lightly brush with melted butter.
- Pour a ladle of batter into the pan, quickly swirling or using a spreader to create a thin, even layer.
- Cook until the edges lift and the bottom is lightly golden, then flip and cook the other side briefly.
- Transfer to a plate and repeat with the remaining batter, adding more butter to the pan as needed.
- Serve warm with fresh berries, melted chocolate, and a dusting of icing sugar, if desired.
