This ragù gets better the longer it sits, so if you have the time, consider making it a day ahead. Serve with Grilled Romaine with Lemon and Parmesan and a hearty Italian red wine, like Barolo.

This version of coq au vin is familiar and comforting but has been brightened up a bit by a simple swap: white wine for red. Bacon adds a lovely smoky note, and the fat aids in browning the chicken and vegetables, but if you don’t want to use bacon, you can omit it and swap in 2 tablespoons olive oil. This recipe loves cast iron, since it starts and finishes on the stovetop with oven braising in between.

There are a few rules for cooking with mussels. First, throw away any mussels that are already opened when you purchase them. Second, use a paring knife to remove the fibrous strings on the outside of the mussels—called the “beard”—as they are tough. Third, discard any mussels that haven’t opened during cooking.
